This morning I went to eat a bowl of pho and saw a piece of meat like this and had to ask the restaurant owner to change it to another bowl. When I got home, I felt sorry for not noticing it sooner.

The rainbow seen on some meats, especially beef and ham, is due to a phenomenon known as **delamination**. This happens when light waves interfere with each other as they reflect from the surface of the meat.
